CASHEW AND COCONUT BALLS

Dee Cox, one of our Committee Members, brought some delicious snacks (energy bites) to one of our Meetings, which are vegetarian, gluten and dairy free but not good for anyone with a nut allergy.  Everyone enjoyed them and asked for the recipe, which we share below:

CASHEW AND COCONUT BALLS

Preparation time: 15 mins;  Makes 16 Balls

125g chopped pitted, dried dates

Zest of half an orange 

4 Tbs Juice from an orange

150g Unsalted Cashew nuts

150g diced soft dried apricots

25g desiccated coconut

(Ingredients may be changed to your own preference, ie orange juice could be substituted for apple or other juice of your choice)

1. Mix the dates with the orange zest and juice in a microwavable bowl.  Cover with cling-film and microwave for 2 mins (or set aside to soak for 1 hr). 

2. Leave to cool.

3. Put the cashews in a food processor and whiz until finely chopped

4. Add the cooled date and orange mixture and the apricots to the cashews in the food processor to combine

5. Roll into 16 balls and roll each ball in the coconut

6. Chill for 1hour until firm and then store in an airtight container in the fridge.

These energy balls will keep for up to a week in the fridge or up to 2 months in the freezer
